Hugh-Baby's brings a Nashville idea to West Ashley: put a great griddle cheeseburger and slow-smoked pork on the same short menu and let people order both. Beef is ground in-house daily, the pork is smoked low and slow, and the whole operation moves at counter speed on St. Andrews Boulevard. It is cheerful, scratch-made, mid-South comfort food rather than a whole-hog pilgrimage — and it never pretends otherwise. The move is the BBQ Burger, a griddled patty stacked with slow-smoked pulled pork, plus a comeback sauce that earns its name. The BBQ pork sandwich stands on its own with a tomato-based glaze, and the griddle-fried BBQ bologna sandwich is a straight nod to the old burger-and-rib joints of the owners' youth. A double cheeseburger and a fried catfish sandwich fill out the board. Fast, unfussy, and genuinely good at the narrow thing it set out to do.
